We - это всегда подлежащее и отвечает на вопрос КТО?:

*We are happy. - Мы (кто?) счастливы.

*We live in London. - Мы (кто?) живем в Лондоне.

Us никогда не бывает подлежащим и отвечает на вопрос КОМУ/КОГО?

*He told us the truth. - Он сказал нам (кому?) правду.

*They asked us for help. - Они попросили нас (кого?) о

В предложении "Нам было весело" 'нам' - это не 'us'. Один из возможных вариантов перевода: 'We had a lot of fun.'

По аналогии "Нам было холодно" - 'We were cold.'

we need to eat => дословно переводится как "мы нуждаемся в еде"

  Что бы понять, что ставить, нужно понять смысл фразы

P.S. "нас нужно поесть" звучит как-то страшно, по этому we
